Recently, the chain added “fresh” and “healthy” to its list of desired terms as it developed a new foodservice offering. Prior to introducing its new fresh and healthy foodservice lineup less than a year ago, Holiday’s offering had consisted of heat-and-serve products that required no preparation or handling, and appealed primarily to the chain’s core customer base of adult males.

In an effort to create an offering that appeals to a wider variety of customers, Holiday partnered with Taher Inc., a contract foodservice management company that helped the c-store chain develop new fresh and healthy products and packaging.

“‘Quality’ in our food offering has been a discussion topic for quite some time — two or three years. Then quickly, we really got into ‘fresh and healthy’ as a term that correlated well with the term, ‘quality,'” President and Chief Operating Officer Brent Blackey told CSNews Online.

“We try to make sure we appeal to those people who are on the go, and even though they’re in a hurry and maybe multi-tasking at the time they stop in, that there’s a quality offering there,” he continued. “That’s particularly true to the discerning female consumer and Millennials these days.”

Minnesota-based Holiday has stores in nine Midwest states and Alaska, and chose a cross-section of 20 locations in the Twin Cities area for an initial in-store sampling of the new items. “We did the sampling right away,” Blackey recalled. “We wanted people to really have an opportunity to taste and see. Once they tasted and tried it, we thought they’d be sold on it.”

Currently, Holiday’s lineup includes a Farmer’s Market Salad; Garden Salad; Chicken, Pasta & Bleu Cheese Salad; and Berry, Walnut & Chicken Salad. The quality of these salads is intended to rival those found in popular mid-sized restaurants such as Applebee’s or Panera Bread, Blackey explained. A Chicken Caesar Salad and Asian Chicken Salad are expected to debut in the first quarter of next year. The salads are priced at $4.99 each.  salad

Additionally, Holiday offers a Turkey, Cherry & Almond Pasta Salad and Italian Pasta Salad, as well as three snack cup varieties: Grape & Cheese; Celery & Peanut Butter; and Apple & Caramel Icing. The pasta salads and snack cups are priced in the $2.69 to $2.89 range.

CHICAGO — Although major foodservice brands, including both retailers and restaurants, have been developing ways to capitalize on the breakfast daypart and bring in more customers during the morning hours, this increased operator activity hasn’t necessarily had the intended effect. Most consumers still source breakfast from home.

Just 20 percent of consumers report eating breakfast away from home more often than they did a year ago, according to the Breakfast Consumer Trend Report by Technomic Inc.

In order to grab more share of stomach with breakfast fare, operators must continue exploring new growth avenues.

“Opportunities to promote breakfast can extend far beyond conventional morning hours,” said Technomic Executive Vice President Darren Tristano. “Operators looking to promote this daypart can leverage consumer interest in all-day or late-night breakfast programs. There’s also room to expand brunch options, and even get creative by applying traditional breakfast flavors to non-breakfast foods.”

Key findings of the report include:

  • Limited-service breakfast customers consider value menus, breakfast sandwiches and portability to be highly important.
  • Full-service breakfast customers value variety, all-day breakfast options and signature menu offerings the most.
  • Coffee is a key part of breakfast. Sixty-four percent of consumers drink coffee at breakfast, and 54 percent of these customers prefer a restaurant that offers free coffee refills. Thirty percent agree that they are loyal to concepts that serve their preferred coffee brand.
  • Consumers connect breakfast to health. Sixty-three percent believe it is unhealthy to skip breakfast, and open-ended data shows that many consumers want more healthful breakfast options.

Although familiar flavors have staying power on restaurant menus the consumer is asking for more flavor in their food.

Operators can take note on those fast growing popular flavors for profitable results with their product selection in vending machines.

Seventy-three percent of consumers surveyed indicated that if they try and like a menu item with an innovative flavor, they are highly likely to return and try it again, according to Technomic’s Flavor Consumer Trend Report. Key findings of the research include:spices

  • New flavors are attractive to many consumers, with 37 percent saying they are increasingly driven to try new flavors and 41 percent saying new flavors can influence them to visit a restaurant.
  • For the first time, a majority of consumers (54 percent) prefer hot or spicy sauces, dips or condiments, an increase from 48 percent in 2011 and 46 percent two years earlier.
  • Flavor synergy is a trend to watch, with research showing that sweet flavors pair well with the greatest number of other flavors, including savory, sour, smoky or spicy profiles.

“In a competitive foodservice climate, flavor differentiation is a must-have for operators,” said Darren Tristano, executive vice president of Technomic. “Because today’s foodservice consumers have such a strong expectation for innovative flavors, operators and suppliers have to help the menu stand out by staying ahead of the flavor curve. Knowing which flavors are up-and-coming and truly enticing to guests will be essential in gaining their dining-out dollars.”
